Chilled Cucumber, Yogurt and Mint Soup
Makes 6 servings
Ingredients:
2 tablespoons butter
1 medium onion, diced
1 English cucumber, diced
3 cups chicken broth
2 cups plain yogurt
salt and pepper to taste
1/4 cup fresh mint, chopped
Preparation:
Sauté onion in the butter until golden. Stir in cucumber and cook 2 minutes. Add chicken broth and cook covered for 15 minutes.
Cool slightly and purée in a blender. Chill. Stir in yogurt, mint and salt and pepper.
