TURKEY JERKY WITH SCRAMBLED EGGS

6 eggs
1 cup packaged hickory flavored turkey jerky
1 tomato peeled and chopped
1/2 small onion, chopped
1/4 tsp cayenne
1 clove garlic, minced
pinch ground cumin
1 tbs olive oil or other flavorful fat
salt and pepper to taste

Soak jerky in hot water for 1/2 hour. Drain and pat dry between absorbent paper. Shred slightly or pound with light hammer if necessary to lighten to help integrate into mixture. Set aside
In skillet, heat the fat and saute the onion and garlic until fragrant. Add tomatoes, cayenne, cumin, and simmer 10 minutes. Mix in turkey jerky and simmer for 10 more minutes.
Push mixture to side of pan and add eggs, scramble slightly, then combine with jerky-vegetable mixture. Good served with white flour or wheat tortillas.
