Sauteed Chicken Breast with Brandy Mustard Cream Sauce
Ingredients
1 Boneless, Skinless Chicken Breast
1 Tbls. Butter
2 Tsp. minced Shallots
1/4 cup Brandy
3/4 cup Heavy Cream
1 Tbls.Dijon Mustard
Salt & White Pepper to Taste
Method
1. Saute Chicken Breast in Butter until nicely browned on both sides, Remove
2. Saute shallots until translucent
3. Add Brandy and Flambe(Careful!)
4. Add Cream and reduce till coats the back of a spoon(nape)
5. Add Dijon Mustard
6. Season and Taste - Add Chicken to heat through
*** Note: Excellent served with Roasted Cauliflower
